Bologna Cups
Mashed Potatoes
Oscar Mayer Bologna
Shredded Cheese
Place Bologna on a baking sheet. Place bologna in oven until it forms a cup. Using an ice cream scoop, place a scoop of mashed potatoes in the center of each piece of bologna. Sprinkle with a bit of cheese. Return to oven until cheese melts.
In researching this recipe, you would be shocked at how people are preparing and apparently eating bologna.

ReplyDeleteI could eat these on my new "eating plan" aka diet with the fat free bologna and all, but the mashed potatoes add too many points. I'm certain they don't serve these in the Iowa City schools, but maybe Anna & Grace would like them. Who knows?
ReplyDeleteActually, the boxed mashed taters have a reduced fat recipe on the side of box. You just use fat free milk and only 1 T of light margarine. I think its only 2 points for 1/2 cup. So bologna cups could be in your future. I was certain that bologna cups were an invention of the Perry Schools cooks.
ReplyDeleteHoly Crap I totally forgot about that culinary delight. I'm gagging as I write this. I always picked the cheese off the top and without fail intended to eat the potatoes but got grossed out once they hit my tongue. Yuck.
